Here is a collection of what we feel is the best of the Web as far as Disney is concerned, with of course an emphasis on the Animal Kingdom. This is by no means an exhaustive list; for that, we recommend Disney Links.
Official Site - Walt Disney World Resort - The recent re-design has been mostly a failure, but this is where you will get the official word on all things WDW.
Official Site - Animal Kingdom - Direct to our favorite park for the company line.
Rainforest Cafe - Home site of the non-Disney restaurant at the Animal Kingdom entrance.
We're not much on forums (we just don't have a lot of time), but these are a few that we have lurked on in the past and found useful and enjoyable.

TouringPlans.com - "Official" site of the Unofficial Guide to Walt Disney World, and our favorite net stop when planning.
Studios Central - The inspiration for NahTahZu.com, Matt's site dedicated to Disney's Hollywood Studios. We really don't like the Studios, but Matt doesn't like the Animal Kingdom, so it's all good.
WDW Today - Online home for the best Disney podcast ever. And no, they haven't given us a grant.
WDW Live Entertainment Schedule - Steve Soares updates this site weekly with the latest schedule for all of WDW
MousePlanet - A good all-around site with original content pretty much daily.
All Ears Net - Deb's site is extensive and updated regularly.
Mouse Savers - Mary's site has all the info you need to find the best price for your upcoming trip.
Jim Hill Media - The Drudge Report for Disney fans. Jim never met a rumor he wouldn't print, but he does seem to have some good sources for not-yet-public news.
MouseWorld Radio - Mike Newell has put together the best Disney-themed internet radio network.
Walt Dated World - a site dedicated to past attractions at WDW.
Hidden Mickey's Guide - Steve Barrett's online home for his seminal book on Hidden Mickeys
Disneyworld Trivia - Lou Mongello's online home for his seminal book on WDW trivia
DAK Hidden Mickeys Tour Notescast - We haven't tried this yet, but it looked interesting. For 99 cents, you can carry all the Animal Kingdom HMs in your pocket.
